Cabernet Sauvignon 2007

Red Mountain AVA

Silk Route Caravan

Here is our first production of a Red Mountain, 100% varietal, Cabernet Sauvignon. Red Mountain is known as one of the best viticultural areas (AVA) in Washington for this variety. Much warmer than “up valley,” this Eastern edge of the Yakima wine region is defined by a shallow peaked pyramid of sparse soil and sloping vineyards, known as Red Mountain. Northerly slopes are planted here, which helps buffer this heat, allowing the grapes to hang well into October, while preserving that crisp Washington acidity.

Our Red Mountain Cabernet was aged for a full 24 months in French Oak barrels, accenting the complex fruit with a wonderful vanilla woodiness. This aging, and the wonderful quality of these grapes, have generated a wine you can really describe as “silky.” This often overused descriptor (what does silk taste like anyway? Who would eat it?) is appropriate in describing the texture of this wine: so smooth in the mouth, yet so intricate in its flavors. Look for a caravan of sensory delights such as cassis, bramble berries, cinnamon spice and more.

We have been quietly bottle aging this wine for the last twelve months. Now it is opening up and showing its promise of wonderful years to come. Production is limited, so we urge you fans of Cabs to give it a try!
